I made a few changes: I substituted grocery-store chili powder for most of the cumin and garnished our plates with shredded basil, both due to DH’s preferences. My kids love how crisped up the skin gets, and the flavours in the rub are wonderful, especially on the squash and fennel. I've made it several times, both for family dinners and for company, and it's always a hit. Fast prep and cleanup for a time when there seems to be more work than less to tend to. Swapped a sweet potato in (as squash aren’t in season during lockdown) as suggested by another reviewer (many thanks). Used the veg for four but chicken for two. Just the right amount of heat with the cayenne pepper. Super easy for a weeknight and look forward to playing around with other modifications / substitutions to mix it up!ĭelicious. Agreed there was quite a bit of oil in the sheet as the chicken released it's juices. I used more grapes, and was happy with the end result. I tried to trim the skin as recommended by others, but still had lots of fat. Super easy and very tasty! This is a very forgiving recipe in my opinion - didn’t measure much and adjusted some ingredients to suit what was on hand. I use coconut palm sugar instead of brown sugar because that's how our family eats, and it turns out fine. If I used Morton's I'd cut it a little and if using fine salt I'd dramatically cut the amount. One of our family's favorites! A note on the salt comments: I use Diamond kosher salt and it's perfect as written. One time I couldn’t find the brown sugar in the freezer, so I substituted molasses. I’ve substituted ras el hanout for the spice mixture. Any kind of grape works, but my favorite is purple seedless. 1 TBL PEPPERĪ family favorite! I sometimes use acorn squash but more often use delicata. There is something wrong with measurements in this recipe.
